It's breakfast time!

"Take care of your body. It's the only place you have to live."

Breakfast is the most important meal of the day and also my favourite.
Studies show that breakfast can be important in maintaining a healthy body weight and that breakfast provides you with the energy and nutrients that lead to increased concentration in the classroomSo, I decided to give you some of my favourite breakfasts recipes. 

Granola with yoghurt and fruit

1 yoghurt (greek yoghurt)
chia seeds
your favourite fruit
Optional extras:
honey or cinnamon for extra sweetness

Banana pancakes 

1/2 medium ripe banana
2 large eggs
butter or oil, for the pan
Optional extras:
1 tablespoon honey
1/2 cup chopped nuts, chocolate chips, or a mix
1 cup fresh fruit, like blueberries, raspberries, or chopped apples
Maple syrup, jam, powdered sugar, or any other toppings, to serve


1. Mash up bananas in a large bowl
2. Whisk eggs and add to banana paste
3. Fry in a pan with a little heated oil or butter

Avocado on toast

1 ripe avocado
2 teaspoons fresh squeezed lemon juice
1/2 teaspoon fine grain sea salt
2 slices of bread, toasted
2 large eggs, soft-boiled or poached

1. In a small bowl, mash the avocado, lemon juice, and sea salt together with a fork.
2. Spread the mashed avocado on the slices of toasted bread.
3. Place a soft-boiled or poached egg on the toast/bread and serve immediately.

Healthy waffles
waffles (BIO or homemade)
and some fruit, cinnamon, honey/maple syrup...
For homemade you need:
2 large eggs
1 ¾ cups milk 
¼ cup oil (I used melted butter)
1 tablespoon honey
½ teaspoon cinnamon 
¼ teaspoon baking soda
1 ½ cups whole-wheat flour 
2 teaspoons baking powder
⅛ teaspoon salt

1. Preheat your waffle iron.
2. In a large mixing bowl whisk together the eggs, milk, oil, honey, cinnamon, and baking soda until well combined.
3. Add in the flour, baking powder, and salt and whisk together just until the large lumps disappear.
4. When the waffle iron is hot, dab it with a little butter and then ladle some batter onto the center of the iron. Follow the instructions that came with your waffle maker to know how long it should be cooked (mine takes about 3 - 4 minutes each).
5. Keep waffles warm until you finish cooking all of them. Top with pure maple syrup and fruit. 

Oats, oats, oats! 

1/3 cup old-fashioned oats
2/3 cup water
honey/agave nectar or maple syrup 

1. Prepare the oats according to the package directions. 
2. Top with the fruit, nuts and cinnamon or with anything healthy you like. 
3. Drizzle with the agave nectar.
