Halloween desserts

Halloween brownies
Ingredients:
1¼ cups all-purpose flour
1 teaspoon salt
2 tablespoons dark unsweetened cocoa powder
11 ounces dark chocolate, coarsely chopped
1 cup (8 ounces) unsalted butter, cut into 1-inch pieces
1 teaspoon instant espresso powder
1½ cups granulated sugar
½ cup packed light brown sugar
5 eggs, at room temperature
2 teaspoons vanilla extract

Instructions:
1. Preheat the oven to 350 degrees F. Butter the sides and bottom of a 9x13-inch glass or light-colored baking pan. Line the pan with parchment paper.
2. In a medium bowl, whisk the flour, salt, and cocoa powder together.
3. Put the chocolate, butter and instant espresso powder in a large bowl and set it over a saucepan of simmering water, stirring occasionally, until the chocolate and butter are completely melted and smooth. Turn off the heat, but keep the bowl over the water and add the sugars. Whisk until completely combined, then remove the bowl from the pan. The mixture should be room temperature.
4. Add 3 eggs to the chocolate mixture and whisk until combined. Add the remaining eggs and whisk until combined. Add the vanilla and stir until combined. Do not overbeat the batter at this stage or your brownies will be cakey.
5. Sprinkle the flour mixture over the chocolate mixture. Using a rubber spatula (not a whisk), fold the flour mixture into the chocolate until just a bit of the flour mixture is visible.
6. Pour the batter into the prepared pan and smooth the top. Bake in the center of the oven for 30 minutes, rotating the pan halfway through the baking time, until a toothpick inserted into the center of the brownies comes out with a few moist crumbs sticking to it. Let the brownies cool completely, then lift them out of the pan using the parchment paper. Cut into squares or put them into molds like I did for halloween style, and then serve. 

Healthy dark chocolate
Ingredients:
¼ cup coconut oil, melted
1 cup dark cocoa
1-2 tablespoons pure raw honey or pure maple syrup
½ teaspoon pure vanilla extract
pinch of sea salt

Instructions
1. Combine all the ingredients in a small bowl and stir until well mixed and smooth. You can pour the chocolate into candy molds to make chocolate candy, you can put the chocolate into a cake decorator (or plastic bag with the edge cut off) and pipe out chocolate chips or you can pour the chocolate into wax or parchment paper and make bars. 
2. Freeze until hardened – about 30 minutes. 
3. Store the chocolate in the fridge.


Pumpkin muffins
Ingredients:
 3/4 cups all purpose flour
1 cup sugar
1/2 cup dark brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
2 eggs
1 15 ounce can pure pumpkin puree
1/2 cup coconut oil
1 teaspoon vanilla extract

Instructions
1. Preheat the oven to 375 degrees and place 12 paper liners into each well of your standard size muffin baking pan.
2. Measure out the flour, sugars, baking soda, salt and spices in a medium bowl and whisk together. Set aside.
3. In another bowl, whisk together the eggs, pumpkin puree, coconut oil and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and stir together. Do not over mix, just stir until everything is incorporated into the batter.
5. It is helpful to use a large scoop (like an ice cream scoop) to evenly distribute the batter into each well. They will be nearly full. This will help give your muffins a nice puffy dome.
6. Bake your muffins for 20-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
7. Decorate it in halloween style. :)
Raw apple pie 
Ingredients:
1 cup unsalted almonds
1 cup unsalted cashews
1/2 cup coconut oil
2 apples 
1/2 cup honey
1 teaspoon cinnamon
nuts for decoration

Instructions
1. Put almonds and cashews in food processor, then add coconut oil. Process until the mixturesticks together.
2. Dump your crust mixture into pie crust/glass dish. Press the crust down firmly in your dish with your hands. Crust is now done.
3. Then put 2 apples, cinnamon and honey in the food processor. Process until it's well mixed.
4. Dump appley-mixture on top of crust. Smooth out with spoon.
5. Cover and throw in freezer overnight. Decorate with nuts.
This is my own recipe and it is delicious!
